Pork and Potato Paradise Recipe

Breakfast is my favorite meal of the day.  I rarely eat breakfast because I’ve developed a habit of living off coffee during my weekday mornings.  Fortunately, my weekends are full of cooking which includes the glorious meal, BREAKFAST!  One of my favorite breakfast recipes is a remix on biscuits and gravy (my Dad’s favorite).  Beautifully baked thick cut fries covered with cheese and topped off with bacon and sage sausage gravy.  I altered the gravy recipe from Pie Pushers’ Biscuits and Gravy recipe in Food Truck Road Trip — A Cookbook by adding bacon and substituting sage sausage for their local sausage.  I also made a lot less than their recipe.

Pork and Potato Paradise

Gravy

  • 2 ounces jimmy dean sage sausage
  • 2 ounces thick cut bacon chopped
  • 1/2 cup yellow onion
  • 1 1/2 tsp minced garlic
  • 1/2 tsp red pepper flakes
  • 1/2 tsp dried thyme
  • 1/4 cup all purpose flour
  • 1 1/2 cups heavy whipping cream
  • Salt and Pepper to taste

Heat a medium pan over medium heat.  When pan is hot, add sausage and bacon to brown.  Add onion when sausage is almost cooked through and cook until they are translucent. At this point, add garlic, red pepper flakes, and thyme and cook for a couple minutes.  Add flour stirring until combined and clumps are gone.  Add heavy whipping cream and reduce heat to medium low cooking for an additional 15-20 minutes, stirring occasionally.   Salt and Pepper to taste.

Baked fries

  • 3 medium yellow potatoes
  • 1 tbsp olive oil
  • A pinch of garlic powder, paprika, onion powder, and chili powder
  • Salt and Pepper to taste

Preheat the oven to 400°F.  Cut potatoes into wedges and place into bowl or resealable bag.  In a small bowl, mix together the small amount of seasonings.  Add oil and seasonings to bowl or bag with potatoes and toss to coat.  Spread seasoned potatoes n a single layer on a baking sheet.  Add salt and pepper to taste.  Place tray on center rack of preheated over and bake for 40 minutes, flipping fries half way through.

Once done, assemble baked fries in bowl, top with cheese of choice, smother with gravy and ENJOY!
