INGREDIENTS
2 eggs
1 cup sugar
½ cup milk
¼ cup vegetable oil (not olive)
1 cup flour
1 tsp baking powder
1 pinch salt
1 tsp vanilla
1 lemon peel zested
2 Tablespoons cocoa (or more if you like it darker) for marbling
1 pinch of cinnamon
1 pinch of nutmeg
Grease and flour a loaf pan. Set aside. Preheat oven to 375° F. Put eggs in a bowl with the sugar, lemon peel, and vanilla. Mix until smooth. Add milk and oil to the egg mixture and stir to combine. In a separate bowl whisk together flour, baking powder, and salt. Add the flour mixture to the egg mixture and stir until combined. Do not overmix batter. Reserve some of the batter in a separate bowl. Pour remaining batter into pan. Add the cocoa to the reserved batter and mix until combined. Pour the chocolate batter into pan for marbling. Reduce oven temperature to 350° F and bake for about 40 minutes. Use a toothpick to poke center of loaf. The loaf is done when the toothpick is clean when removed from the loaf.
